Many families I know are trying to cut back or eliminate meat this year and my family is right there with them. We are working to cut back on how much meat we consume to help with our grocery bills as well as our lessening our impact on the planet. We have some big goals this year and to help some of you who are also walking this path, we compiled a list of my families favorite vegetarian dinner recipes.

This delicious recipe, though a little bit of an endeavor, is worth all the work you put in. This is a show stopper and is luscious and creamy. Filling and filled with tons and tons of flavour this is something you will get asked to make over and over again. With pumpkin, lentils and lots of garlic you will be amazed that this has no meat or dairy whatsoever. The work again is worth it.

If you are looking for something a little less work filled then this is ideal. It is delicious simple and vegetarian for anyone not ready to give up their cheese. It is a great meal and it has worked great as something you can prepare in advance and then freeze and pull out whenever you need an easy meal. It has been a bit of a life saver when I need some extra food on the table due to unexpected guests, or just when I have had a long hard day and don’t want to cook.
Vegetarian Taco Lettuce Wraps by Feasting not Fasting
If your family loves taco tuesdays as much as mine do then this is something you might want to think about. Not only is this great on your wallet, it makes a LOT so it is also great when you have unexpected additional kids – something that happens alot in my house. Filled with beans, corn, quinoa and jam packed with flavor I bet your kids wont even ask where the beef is.

Greek food is a common craving in our house you can see why this would be on our dinner table from time to time. Granted our version the tomatoes are left to the side as two members of our household are not fans. This is a great main for those lazy days or you can have it as a lovely little side dish – I have even made it for one or two potlucks and school functions where it has been a huge hit.

If you have just started going meat free from time to time and the idea of tofu seems rather daunting to you then this recipe is perfect for breaking the ice. This is a can’t-stop-eating dish that will really take your monthly meal planning up a notch. With non stop flavor I definitely suggest making lots of leftovers so you can have a couple lunches during the week.
