Holiday Treats Lead to Salad Eats
I LOVE the holidays even though some days seem to feel very overwhelming. I try to remember how precious these years are and focus on keeping our family traditions alive year after year.
One of our favourite traditions is our annual trip to the local theatre to watch a Pantomime. This will be our 6th year and I hope there are many more to come. We always visit our local park where more than three million twinkling lights transform the forest at Christmas time and the miniature train areas in the middle of the city’s wondrous Park offers rides to all kids, big and small. Of course all these activities come with simple indulgences such as candy canes, hot chocolate, popcorn and baking which can lead to over-indulgences very easily!
So I thought I’d share a recipe for a yummy salad that my family enjoys when we feel like a break from all the holiday treats.
POMEGRANATE AND FETA SALAD
INGREDIENTS
1 head of romaine lettuce – washed and torn
1 bunch spinach – stems removed and washed and torn
Seed of one pomegranate
1/4 cup toasted pine nuts
1/2 cup feta cheese
DRESSING:
1/3 cup olive oil
1 tbsp red wine vinegar
2 tbsp maple syrup
1 tsp Dijon mustard
1/2 tsp oregano
Salt and freshly ground pepper
Toss lettuce and spinach together in large bowl. Add pomegranate seeds, pine nuts and feta.
Whisk dressing ingredients together and store in fridge. Toss with salad just before serving.
