We carved our pumpkin last night, my favourite Halloween tradition! My second favourite Halloween tradition is roasting the seeds that come out of a newly carved jack’o’lantern. It is quick and easy, here’s how!

Wash all the gunk from the pumpkin off your seeds with some water and a strainer.

Lay the seeds out on a paper towel to absorb the water from rinsing.

Use a non stick baking sheet or pan (I love my Pampered Chef stoneware for this!) and spread the seeds out. Then add some olive oil to lightly coat the seeds.

Sprinkle on some spices. I used sea salt and this Epicure Garlicky Dill seasoning, because I am currently obsessed with it.

Get your hands in there and mix it all up.

Toss them in the oven at 350 degrees F for about 15-25 minutes. I just keep an eye on them and shake them up about every 5 mins. Remove when they are nice and golden.
