February is Apple Month!

Every week when grocery shopping, a 3 pound bag of BC organic apples are always in my cart. We use apples in muffins, slurp up applesauce, cook them to top pancakes, steam them with kale for a yummy and nutritious puree, and of course – eat them whole!

BC Tree Fruits is celebrating Apple Month across Western Canada this month. When they offered to send me some healthy, kid-friendly apple recipes to help celebrate this universally beloved fruit, I of course accepted. If you’re going to eat an apple a day – you’ll want some different ways to serve them up!

Apple Pizza 3I have not tried these recipes yet, but the Apple Pizza and Tacos with Apple are both great inspirations on how to use this fruit in sweet and savory dishes. And the Apple Valentines are a great edible card for the occasion this week. I’m looking forward to trying these all out!

Apple Pizzas – use a whole wheat tortilla as your easy, no-make “thin crust.” Then top with a combo of apple, cheese, and nuts.

 

 

Tacos with AppleTacos with Apples – adding apples to a taco mixture would add some nice moisture and sweetness. I like this idea a lot! And don’t bother with those “taco seasoning” mixes from the store. A few spices and herbs will make your taco filling delish without the added sodium of those mixes.

Apple Valentine – This sweet treat takes a few extra steps, but a chocolate drizzle over a sweet apple cake sounds like a nice treat.
