These Ginger Molasses Muffins are absolutely delicious, they taste just like Ginger Molasses Cookies but in muffin form. As I was looking through my Grandma’s old recipes I came across this one and decided to make a small batch to see how they were, well they didn’t last a full 24 hours in our house and everyone has been wanting me to make more since.
Here is the recipe so you can make them too!
You will need:
1/2 cup Shortening or Butter (I used half of each but either works too)
1/2 cup Sugar
1 egg
1 cup Molasses
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 heaping teaspoon of Cinnamon
1 heaping teaspoon of Ginger
1/2 teaspoon of Cloves
1 cup very hot water
What to do:
- Preheat oven to 350 degrees
- Cream butter/shortening with sugar until fluffy
- Beat in egg, until combined
- Beat in Molasses
- Set aside and in a separate bowl mix dry ingredients
- Slowly incorporate dry ingredients into the molasses mixture, until mostly combined
- Pour hot water into the mix and slowly beat or quickly stir until the mix is smooth
- Fill muffin tins 1/2 to 2/3 full and place in a hot oven (We made 28 muffins with this recipe)
- Bake for 15 to 20 mins, until a toothpick comes out clean
- Let cool on a baking rack
