I have one VERY picky, almost 6 year old, eater. When he heard I was making sloppy joes for supper, he was not impressed at all!
Little did he know I had a new trick up my sleeve! These are delicious and easy peasy to make!
Here’s what you’ll need:
Ground Beef
Grated Cheese
Pillsbury Country Biscuits
Plain BBQ Sauce (We like Sweet Baby Rays)
Rolling Pin
Muffin Tin
Frying Pan
Ok, Let’s Get Started!
Start by frying up your beef and draining out the left over fat.
Lower your element hear to 1 or ‘simmer’ and mix in enough BBQ sauce to make the ground beef stick together and look like sloppy joe meat. Let this sit for a few minutes on the low heat.
Get out your Pillsbury biscuits and separate them. Roll them with a rolling pin so they are thin circles.
Take the rolled biscuit and line the bottom of your muffin tin. Repeat with desired amount of servings.
Fill your biscuit lined muffin tin cups with your ground beef & BBQ sauce mixture. About a spoonful and a half in each.
Top with grated cheese! Tex Mex is a good option if you like some kick to it!
Bake at 400 degrees for 10 minutes.
