Cheesy Stuffed Peppers with Quinoa

Ok, so the holidays are coming and you’ve already been naughty, in the eating healthy department that is! With so many parties and reasons to celebrate it is hard to stay on track. I like to make myself feel better by making something healthy yet quick for my next dinner after I’ve indulged. Here, I share my recipe for Cheesy Stuffed Peppers with Quinoa.

Ingredients:

  • 3 peppers- orange, red, yellow- any type you likeQuinoa Recipe1
  • 1 cup cooked Quinoa
  • 1/2 diced zucchini
  • 1/2 cup diced mushrooms
  • 1 cup low fat cheese- any type you like, i just used the marble cheddar that we had in the fridge at the time
  • salt & pepper
  • Butter or coconut oil (whatever you like to saute in)

Method:

  • Cook quinoa according to package directions
  • Saute zucchini and mushrooms in a little butter
  • Cut the top of the peppers off and remove seeds
  • Add the quinoa to the sautéed veggies
  • Mix in cheese
  • Spoon mixture into peppers
  • Top with a sprinkle of cheese if desired
  • Pop into a 350 degree oven for about 20 minutes
