There is just something so wonderful about the sights and smells of fall; the warm spices; the changing leaves and the pumpkin filled foods.
Pumpkin Bread (or loaf) is a family favourite around here and this recipe is so simple, my kids love to help make it!
You will need:
2 3/4 cups Sugar
1 cup Vegetable Oil
4 eggs
3 1/2 cups Flour (I use 3 cups White Flour & 1/2 cup Whole Wheat but you can use whatever you prefer)
2 teaspoons Baking Soda
1 teaspoon Salt
2 1/2 teaspoons Cinnamon
2 teaspoons Nutmeg
2/3 cup Water
2 Cups of Pumpkin Puree (Not Pumpkin Pie Filling)
What to do:
- Preheat the oven to 350 degrees F
- Grease & Flour two loaf pans; set aside
- Beat Oil & Sugar in mixer until combined
- Add eggs and beat well; set aside
- In a separate bowl, combine Flour; Baking Soda; Salt & Spices
- Alternately add Flour mixture & Water to batter; mix until combined
- Beat in Pumpkin
- Spoon batter into loaf pans
- Bake for 55 – 65 mins; until toothpick comes out clean
- Cool on wire rack
- Enjoy!
