Funky Fork: An Essential for Busy Families!

What if I told you that you could fill your freezer with delicious and healthy meals prepared by a Red Seal Chef right in Edmonton!? In the quest for eating nutritious, balanced meals when my meal planning and grocery shopping goals go out the window- we tried Funky Fork Catering and I’m so excited to share it with you!

Erin Howe, the owner of Funky Fork, is a Red Seal Chef and educator in NAIT’s Culinary Continued Education Program. She also has a love of fitness and health. With this vision in mind, she created Funky Fork’s freezer meals so that others can enjoy good nutrition when they don’t have the time (or desire) to make their own.

These are the meals we tried:

Hamburger Quinoa Soup, Beef Stew (so tender!), Sweet & Sour Meatballs with rice, Singapore Chicken with veggies over thin noodles, Root Vegetable Curry with rice, Beef Lasagna and broccoli and Turkey Meatballs with a mild tomato sauce over penne. I’m getting hungry just thinking about it! We loved everything, but my absolute favourite would have to be the Hamburger Quinoa Soup and the Root Vegetable Curry with rice. The meals have a good balance of protein, carbs and veggies. This helps me ensure I’m feeding my family properly, takes the guesswork out AND helps me stay on track with portions.

Another thing that I was impressed with was the freshness of the food. Even after being frozen for a while in my deep freeze everything tasted amazing and wasn’t mushy when I warmed it up. Another bonus, meals come in plastic containers with lids that are perfect for storing leftovers.

Just add salad and a glass of wine and you are good to go!

We tried the medium size, which was certainly enought for me, my husband and our 3 year old. Next time, for the sake of leftovers, I would order the large. An individual meal is $9, medium (2 portions) is $17 and large (4 portions) is $34. I feel that this is a great value for guilt free, locally made, nutritious and REAL food that I just have to throw in the microwave or oven! #momwin
