Recipe: Roasted Chickpeas

Just the other day I made roasted Chickpeas for the first time and oh my goodness they were good! Super quick; easy and my kids love them too!

You will need:

  • Chickpeas
  • Olive Oil
  • Spices (various, listed below)

I started with dried chickpeas and cooked them according to the directions on the bag; you can use canned chickpeas as well just be sure to rinse them before you get started.

Pre-heat your oven to 400 degrees & toss your chickpeas in a bowl. Drizzle olive oil over the chickpeas (just enough to lightly coat them) and add spices.

I made two batches of chickpeas, so the first batch was Olive Oil; Cumin; Chili Powder & a touch of garlic (granules). The second batch had Olive Oil; Garlic (granules) & Thyme (dried). Once you have tossed the chickpeas with the oil & spices place them on a baking sheet (ensuring you only have 1 layer).

The chickpeas will bake for 25-35 mins (depending on your oven and preference – my kids loved the slightly softer chickpeas and I preferred extra crunchy). Be sure to flip halfway through and watch for a golden brown colour.

    This is WONDERFUL! Just made it for lunch. I made a half-recipe. Then served myslef 1 cup for now, and saving the other cup for lunch tomorrow! It’s like all my favorite things in one bowl. Your recipes never strike out Beth! Someone ask me last night on Facebook if all I eat is your recipes…. seems like it! 🙂
