{Recipe} Honey Date Sticks

These Honey Date Sticks are delicious, not too sweet and dare I say healthy?!

You will need:

  • 1 cup Flour
  • 1 + 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Dates (finely chopped)
  • 1 cup Sunflower Seeds (I used unsalted)
  • 3 Eggs
  • 1/4 cup Vegetable Oil
  • 2/3 cup Honey
  • Icing Sugar (for dusting the top)

What to do:

  1. Preheat oven to 350 degrees
  2. Sift together the flour, salt and baking powder;
  3. Stir dates and sunflower seeds into the dry mixture, set aside.
  4. In a separate bowl beat eggs until they are thick
  5. Add oil and honey to the eggs and mix until combined
  6. Next add dry ingredients to honey mixture and stir well
  7. Pour mixture into a greased 12″ x 8″ pan and put into a hot oven
  8. Bake for 35-40 mins or until the top is golden brown
  9. Let cool slightly, and cut into sticks
  10. Remove sticks from pan and lightly dust with icing sugar
