These Honey Date Sticks are delicious, not too sweet and dare I say healthy?!
You will need:
- 1 cup Flour
- 1 + 1/2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup Dates (finely chopped)
- 1 cup Sunflower Seeds (I used unsalted)
- 3 Eggs
- 1/4 cup Vegetable Oil
- 2/3 cup Honey
- Icing Sugar (for dusting the top)
What to do:
- Preheat oven to 350 degrees
- Sift together the flour, salt and baking powder;
- Stir dates and sunflower seeds into the dry mixture, set aside.
- In a separate bowl beat eggs until they are thick
- Add oil and honey to the eggs and mix until combined
- Next add dry ingredients to honey mixture and stir well
- Pour mixture into a greased 12″ x 8″ pan and put into a hot oven
- Bake for 35-40 mins or until the top is golden brown
- Let cool slightly, and cut into sticks
- Remove sticks from pan and lightly dust with icing sugar
