Quick Breakfast: Ham & Egg Muffins

These Egg Muffins are super quick and easy to make; and kids (mine anyways) love them!

 You will need:

  • Eggs (I used 9 for 12 muffin cups)
  • Deli meat (I used thinly sliced ham)
  • Salt & Pepper
  • Optional: Grated cheese


  • Crack your eggs in to a large measuring cup or bowl
  • add salt & pepper and scramble
  • Put 1 slice of meat in each “cup” of the muffin tray
  • Pour egg mixture into each cup about 2/3 of the way full
  • Sprinkle cheese on top
  • Bake in 350 degree oven for 10 minutes or until the eggs are firm
