These Egg Muffins are super quick and easy to make; and kids (mine anyways) love them!
You will need:
- Eggs (I used 9 for 12 muffin cups)
- Deli meat (I used thinly sliced ham)
- Salt & Pepper
- Optional: Grated cheese
Assembly:
- Crack your eggs in to a large measuring cup or bowl
- add salt & pepper and scramble
- Put 1 slice of meat in each “cup” of the muffin tray
- Pour egg mixture into each cup about 2/3 of the way full
- Sprinkle cheese on top
- Bake in 350 degree oven for 10 minutes or until the eggs are firm
