What better way to enjoy a nice summer turning to fall day than sitting on the patio with friends eating a delicious lunch.
For the first recipe I have found a great way to make an egg salad without dairy, so for those of you who are lactose intolerant or simply don’t eat dairy, this recipe is great.
With that being said, it is also amazing for you, who eat everything (just like me!).
Avodcado Egg Salad
Serves 4 for lunch
Ingredients
- 8 eggs
- 8 strips of bacon
- 2 ripe avocados (and by ripe I mean really ripe)
- A large handful of cherry tomatoes
- 1 clove of garlic
- 4 small handfuls of rocket salad
- Salt and pepper to taste
Directions
Boil the eggs for about 8 minutes till they are hard boiled. Run cold water over the eggs and let them cool for a bit before peeling them.
Peel and mash them with a fork in a bowl. Set aside to cool completely.
Fry the bacon till crispy and let it cool on a plate with paper towel to soak up excess fat. Crumble it into smaller pieces.
Cut the ripe avocados in half, remove pit and scoop the meat out into another bowl. Mash with a fork.
Peel the garlic clove and use a garlic press to squeeze it into the avocado.
Wash and cut the tomatoes in quarters and add to the bowl.
Stir together till combined.
Add the bacon and mushed eggs and gently fold it together with the avocado cream.
Add salt and pepper to taste.
Wash the rocket salad and place a handful on each plate.
Scoop the avocado egg salad on top and serve with a smile.
