There’s nothing better than the first barbecue of the year. The sunshine, the smell, and of course, the taste of grilled food. When it comes to dinner at my house, I have 3 main criteria – easy, healthy, and delicious. I don’t have hours to slave away in the kitchen with 2 kids under 2. But I also don’t want to be serving Kraft Dinner every night. I strive to keep it healthy, but it needs to taste good enough that my 2 year old will eat it.
Now that barbecue season is upon us, here a few of my favourite recipes for you to try. From the classic beef burger to a sweet dessert and everything in between.
Best Beef Burger
Although we don’t necessarily follow a Paleo diet in our house, I do try to limit the bread. These burgers were so good we really didn’t need the bun, like the recipe recommends. Although, feel free to add one and it would still be delicious. The addition of the secret ingredient really makes this one of the best burger recipes I’ve ever made. Grilled Portobellos with Quinoa Salad
This is a great vegetarian option that is hearty and tasty. Full of superfoods it’s also incredibly healthy. Get the recipe here: https://www.todaysparent.com/recipe/vegetarian/grilled-portobellos-with-quinoa-salad-recipe/
Southwestern Grilled Sweet Potato Salad
This Southwestern salad from Two Peas & Their Pod is full of flavour and colour. It contains a ton of fresh veggies, beans, and best of all – grilled sweet potato. What’s not to love? Get the recipe here: http://www.twopeasandtheirpod.com/southwestern-grilled-sweet-potato-salad/
Hawaiian Chicken Kabobs
One of my son’s favourite dinners is kabobs. He loves helping to load each skewer with veggies and meat. This recipe from Spend With Pennies uses a great Pineapple Honey BBQ sauce and the sweet pineapple on the skewer is a lovely addition to plain-jane kabobs. Serve these up with a salad and you have a great healthy dinner. Find the recipe here: https://www.todaysparent.com/recipe/vegetarian/grilled-portobellos-with-quinoa-salad-recipe/
Grilled Pinapple with Cinnamon Honey Drizzle
What’s a family barbecue without dessert? This is a simple, fresh dessert that will satisfy your sweet tooth. I didn’t use quite as much honey as the recipe calls for and it still tasted great. My son loved it! Get the recipe here: http://www.wineandglue.com/2014/06/grilled-pineapple-cinnamon-honey-drizzle.html
