Fresh Fruit Salsa Recipe

Fresh Salsa

In honor of Cinco De Mayo, we like to prepare a large bowl of fresh salsa (Pico de Gallo).  In our house we are big fans of fresh salsa over cooked salsa. There is nothing like the taste of all those amazing flavors together!

One thing I have learned over the years is that there are so many fruit choices to use.  Sometimes we use mango, strawberries, pineapple, blueberries, peaches, nectarine, pear, watermelon. Ill be honest I usually just eye-ball the ingredients and it is always a big hit!

The basic recipe is as follows:

2 cups finely diced fruit of choice

1 cup diced tomatoes (Roma tomatoes are best)

1 jalapeno pepper, minced, seeded if desired

1/2 cup chopped cilantro

1 small finely chopped red onion or 1/4 cup scallion

1 or 2 garlic cloves (optional) ** we love our garlic so we use 2

3 tablespoons lime juice

1/2 teaspoon salt

Serve with tortilla chips.  Our favorite brand to use are La Cocina Tortilla Chips (you can find these at Save on Foods, London Drugs or other grocery stores)

Serve chilled.

Depending on the fruit used the salsa may keep for a day or should be used up immediately.  Ie. salsa made with watermelon and papaya would need to be eaten immediately as they do not keep well.

Fresh Salsa also pairs really well with a large bowl of margaritas!
