These Coconut Mini Egg Cookies are the perfect Easter Treat and my little ones love them! So hopefully yours will too!
You will need:
- 1 cup Butter or Shortening
- 1 cup Brown Sugar
- 1 cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1 1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 cups Rolled Oats
- 1 cup Coconut
- 1 cup Mini Eggs (I put the eggs in a plastic bag and smashed them with a rolling pin so they were small pieces)
Preheat your Oven to 375 Degrees
Getting Started:
- Cream butter (or shortening) and sugars in mixer until light and fluffy.
- Add eggs and vanilla and beat until combined
- In a separate bowl combine dry ingredients
- Add dry ingredients to wet ingredients and mix
- Stir in oats, coconut, and mini eggs
- Drop batter by spoonfuls on a baking sheet
- Bake for 10 to 12 minutes or until golden brown
