Comfort Soup

Well, the cold weather has finally hit us here in Edmonton and for the next little bit we are under an Extreme Cold Warning (boo). For me, the cold weather means hot and delicious soups. This past week I have made a couple of my favourite soups to help get us through this cold spell and I hope they add as much comfort to you and your family as they have to my family!

Comfort Soup

Borscht from Irena Macri

One of the first soups I made this week was Borscht. I love anything to do with beets, therefore this is a soup I make a lot during the winter. If you want to have more than just soup for supper, you could also pair it with a delicious Reuben sandwich.

Ingredients

  • Olive Oil
  • Onion
  • Celery
  • Beets
  • Carrots
  • Garlic
  • Salt
  • White potatoes
  • Cabbage
  • Vegetable stock
  • Tomato paste
  • Paprika
  • Coriander seed powder
  • Apple cider or white vinegar
  • Bay leaves
  • Black Pepper
  • Dill for garnish

Cream of Potato Soup from Wine and Glue

Another favourite for my entire family, even the ones who aren’t big fans of soup, is cream of potato soup.

Ingredients

  • Bacon
  • Yellow Onion
  • Celery
  • Carrots
  • Garlic
  • Flour
  • Chicken Stock
  • Russet potatoes
  • Whole milk
  • Salt
  • Pepper
  • Cheddar Cheese
  • Scallions
  • Bacon pieces
  • I like to add dill as a garnish.

 One of the variations I like to do with this soup is to add some creamed corn and frozen corn to it when reheating the leftovers. This gives you a whole new soup to enjoy the next day! This is one of my favourite comfort soups.

Hamburger Soup from Spend with Pennies

Growing up one of my all-time favorite meals was, and is still hamburger soup. I can eat this soup if it’s 30 above outside or 30 below. It is my definition of comfort food. It is an extremely hearty soup that is perfect to take the chill away on these cold winter days.

Ingredients

  • Ground beef
  • Onion
  • Garlic
  • Potatoes
  • Beef broth
  • Canned diced tomatoes
  • Tomato soup
  • Worcestershire sauce
  • Italian seasoning
  • Bay leaf
  • Salt
  • Pepper
  • Fresh or frozen mixed vegetables

Chicken Noodle Soup from Averie Cooks

I think everyone can say that chicken noodle soup is probably the most comforting soup of all time. I love a good, homemade chicken noodle soup because this is another extremely versatile soup. You can use the same basic ingredients to make it a turkey noodle soup, you can add rice (white, brown, wild) or barley instead of noodles, or it could just be a chicken vegetable soup! I don’t actually follow a recipe for chicken noodle soup, so I’ll just tell you the ingredients I use.

Ingredients

  • Olive oil
  • Carrots
  • Celery
  • Yellow onion
  • Garlic
  • Chicken broth
  • Bay leaves
  • Fresh thyme
  • Dried oregano
  • Pepper
  • Egg noodles (or any kind of pasta)
  • Cooked chicken
  • Parsley
  • Lemon juice
  • Salt

Split Pea Soup from In the Kitchen with Kath

This is a soup I know many people are on the fence about. Again, this is just another really great soup for the winter. It’s a thicker soup so it’s perfect for the winter months.

Ingredients

  • Water
  • Ham bone
  • Carrots
  • Celery
  • Onions
  • Bay leaves, thyme, and cloves tied in cheese cloth (this is known as an herb bouquet)
  • Flour
  • Ham stock
  • Split peas
  • Salt
  • Pepper
  • Ham
